Chia seeds are an really good source of Omega 3, which are essential to our well-being. They prevent inflammation and make a great team with the anti-oxidant properties of the blueberries.
This recipe is really easy to make and can be a great breakfast, snack or dessert.
1 1/4 cup Coconut Milk (about a can)
1/2 cup Chia Seeds
2 tablespoons Raw Honey (or to taste)
1 teaspoon Vanilla Extract
Mix coconut milk, vanilla extract, chia seeds and honey in a bowl with a wooden spoon to make the mix smooth.
Place the mix in ramekins. Usually these proportions can fill 6 ramekins of 100gr each.
Blend the blueberries to make them into a puree and add the puree on top of each ramekin.
Let set for 10 minutes outside, then place in the fridge.
They last for 4 to 5 days .
